“Blueberry-Coconut Burgers”

Warning: The following recipe may cause you to ask… “Why would anyone ever put these ingredients together?”  But please trust me on this one… it’s delicious 🙂

Blueberry-Coconut Burgers

Ingredients:

  • 1 lb ground beef (I use 80/20)
  • 1 egg
  • ½ cup frozen blueberries
  • 2 heaping tablespoons almond meal
  • ½ cup unsweetened coconut (shredded)
  • 1 ½ tablespoons coconut oil

In a food processor combine egg, blueberries, almond meal, and coconut.  Pulse together until well blended.  In a large bowl use your hands to mix together blueberry-coconut mixture with ground beef until well blended.  Form into 4 patties.

Heat coconut oil over medium heat in large skillet.  Add patties and cook for 5 minutes on each side.  Garnish with frozen blueberries and unsweetened coconut.

    • The blueberries and coconut in the burger don’t overpower the flavor at all. You can just taste a hint of sweetness. And there is something about the combination of the hot burger, cold berries, and the textured coconut that work surprisingly well together. Glad to hear you have an open mind about it 🙂

  1. Don’t let the naysayers fool you, ingredients like this are amazing together!

    When I used to manage restaurants for Outback Steakhouse, I would slather my steak with butter and let it melt, and then smear a few spoonfuls to grape jelly on top. Scrumptious!!!

    People thought I was crazy, but refused to try it.
