I love avocados. They are delicious, they are nutritious, and like bacon – you can eat them with practically everything 😉 (Example A, Example B) This week Matt, from The Athlete’s Plate, inspired me to use avocados in a whole new way with his Avocado Stuffed Sweet Potato. I tweaked his recipe to accommodate what I had and still managed to create something delicious.
Mashed Sweet Potatoes with Avocado
- 3 small sweet potatoes
- 1 avocado
- 1/3 cup diced onion
- 1 tsp cumin
- Juice from ½ a lemon
- 1 garlic clove, finely diced
- Salt and pepper to taste
- Fresh mint, or any herb of your choice
Preheat the oven to 400 degrees. While the oven is preheating, poke a couple small holes into each of your sweet potatoes. When the oven is ready, bake your sweet potatoes for 45 minutes or until they are cooked through.
Combine the avocado, onion, cumin, lemon juice, garlic, salt, and pepper in a small bowl. Use a fork to mash all the ingredients together until they are well mixed.
When the sweet potatoes are done cooking, remove them from the oven and allow them to cool for a few minutes. Then, slice each of the sweet potatoes into thick slices and place the slices into a large bowl. Add the avocado mixture and once again use a fork to mash everything together until everything is well combined. Garnish with fresh mint leaves or any other herb of your choice. Eat by itself or as a side dish to one of your favorite meals. Enjoy!
