Elvis was a lot of things: the King of rock & roll, a sex-symbol, one heck of a dancer, and most importantly… a snack food genius.  Fried peanut-butter & banana sandwiches?  What a nearly perfect combination of sweet and savory… if only it weren’t for the bread.  Well, not even Elvis can get everything right.  So I decided to help the King out a little, and replaced that yeasty devil with a nothing other than a little bacon…

“Elvis Bites”

  • ½ banana
  • 1 strip of bacon
  • 1-2 tbsp almond-butter

Cook your bacon until it reaches your desired level of crispiness and then allow it to cool.  Then cut your bacon and your banana into approximately 5 bite-sized pieces.  Using a knife put a dollop of almond-butter onto each piece of bite-sized bacon.  Then place each bacon piece on top of each banana piece and secure them to each other with a toothpick.  Sit back to your favorite Elvis hit, and enjoy 🙂
