Yesterday I found myself with about with 2 packages of tomatoes, a package of mushrooms, and some onion that needed to be used before I leave for Panama City tomorrow. So since freezing my Apple & Banana Sauce worked out so well, I thought I’d treat my vegetables the same way.
Thanks to This Week for Dinner for the inspiration from their Homemade Tomato Sauce recipe. I left out the sugar and swapped fresh herbs for hot sauce and Creole Seasoning. This version has a bit of a kick, but tasted great.
Spicy Homemade Tomato Sauce
- 2 tbsp olive oil
- ½ onion, diced
- 4 cloves of garlic, chopped
- 9 Roma tomatoes, roughly diced
- 4 Portobello mushrooms, roughly diced
- 2 Tbsp tomato paste
- ¼ tsp black pepper
- ½ tsp salt
- 1 tbsp Hot Sauce
- ½ tsp Creole seasoning
Heat the olive oil over medium heat. Then add onions and let them cook until they turn soft. Next add the garlic and cook for another minute or two.
Then add the tomatoes, Portobello mushrooms, tomato paste, black pepper, salt, hot sauce, and Creole seasoning. Stir everything together, let it come to a boil, and then let it cook for about 7 – 10 minutes. Remove it from the heat to cool a little, and enjoy 🙂
