“Spicy-Spinach Burgers”

I was inspired to make these burgers when I came across a recipe for spanakopita.  Unfortunately traditional spanakopita involves GRAINS (the phyllo dough) and DAIRY (the feta & ricotta cheese)… two things that I try to avoid.

So using a few things I had in my pantry… I came up with something much more primal-friendly 🙂

“Spicy-Spinach Burgers”
makes 4 servings 
  • 3 cups of spinach
  • 1/8 of a large red onion
  • 1 egg
  • ¼ cup almond meal
  • 1 tbsp of coconut milk
  • ¾ tsp cayenne powder
  • 1 lb of ground beef (I use 80/20)
  • 1 tbsp of Coconut Oil

Blend the spinach, red onion, egg, almond meal, coconut milk, and cayenne pepper together in a food processor.

In a large bowl, add the spinach mixture to the ground beef and combine them together until they are well mixed.

Form into 4 large-sized patties.

Heat the coconut oil over medium heat in a large skillet.  When the oil is hot, add the burgers and cook for 4-5 minutes on each side.

Serve over a bed of spinach (or whatever else your heart desires) and enjoy!
